Darjeeling tea is produced exclusively using the Orthodox method, which preserves the structural integrity of the leaf and the complexity of the final cup. The key processing stages are:
Freshly harvested tea leaves are spread out to reduce moisture and prepare the leaves for further processing.
The leaves are rolled to break the leaf cells and initiate the development of flavour and aroma.
Rolled leaves are kept under controlled conditions to develop colour, flavour, and liquor characteristics.
Heated air is used to stop oxidation and reduce moisture for stable storage and quality preservation.
The processed tea is sorted into different grades based on leaf size and quality before final approval and packing.
