Instant chicory powder is produced from the roasted roots of Cichorium intybus, a plant cultivated primarily in India, France, and Belgium for its inulin-rich root system. The production process involves three stages: controlled roasting of dried chicory roots (which caramelises natural sugars and develops the characteristic deep brown colour and roasted, slightly bitter flavour profile); water extraction of the roasted root mass into a concentrated liquid chicory extract; and spray drying of the extract to produce a fine, free-flowing, water-soluble powder.
The resulting instant chicory powder dissolves fully in hot water, has a naturally caffeine-free profile, and contains inulin as its primary bioactive compound. It is used as a cost-effective coffee extender, a caffeine-free coffee alternative, a flavouring agent in confectionery and dairy, and an inulin source in nutraceutical formulations.
